Ingredients

  • 1 ½ tsp baking powder

  • 120 g (½ cup) unsalted butter, softened
  • 150 g (¾ cup) granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 120 ml (½ cup) whole milk
  • 60 g (¼ cup) sour cream or yogurt
  • 200 g (1 cup) unsalted butter, softened (for frosting)
  • 400 g (3 cups) powdered sugar
  • 23 tbsp heavy cream or milk
  • 1 tsp vanilla extract (for frosting)
  • Pink food coloring
  • Strawberry slices (for ears)
  • Pink fondant circles (for snouts)
  • Toothpick/knife to poke nostrils in snouts
  • Mini chocolate chips or candy eyes (for eyes)
  • Pink sanding sugar (optional, for sparkle)

Instructions

  1. Preheat oven to 175°C (350°F). Line a 12-cup muffin tin with pink cupcake liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, beat butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well. Stir in vanilla.
  5. Mix in half the dry ingredients, then milk and sour cream, then the rest of the dry ingredients.
  6. Divide batter evenly among liners.
  7. Bake for 18–20 minutes, until a toothpick comes out clean. Cool completely.
  8. Beat butter until creamy for the frosting.
  9. Gradually add powdered sugar.
  10. Add vanilla and cream, beat until fluffy.
  11. Tint with pink food coloring.
  12. Pipe pink frosting swirls on each cupcake.
  13. Place a fondant circle in the center for the snout; poke two nostrils.
  14. Add mini chocolate chips for eyes.
  15. Insert two strawberry slices at the top for pig ears.
  16. Sprinkle lightly with pink sugar for sparkle.
