Description

Delightful Peppermint Snow Meringue Bites that are crisp, light, and perfect for the holiday season.


Ingredients

  • 4 large egg whites, room temperature
  • 1 cup granulated sugar
  • ¼ tsp cream of tartar (or 1 tsp lemon juice)
  • 1 tsp peppermint extract
  • 1 pinch salt
  • Crushed candy canes (2–3 tablespoons)
  • Powdered sugar (for dusting)
  • Extra crushed candy cane (for dusting)

Instructions

  1. Preheat oven to 95–100°C (200°F) and line 2 baking sheets with parchment paper. Ensure your bowl and whisk are clean and grease-free.
  2. Add egg whites, cream of tartar, and salt to the mixing bowl. Beat on medium until soft peaks form. Gradually add sugar, beating continuously.
  3. Increase speed to high and beat for 6–8 minutes until thick, glossy, and holds stiff peaks. Add peppermint extract and beat for an additional 5–10 seconds. Gently fold in crushed candy canes.
  4. Transfer the mixture to a piping bag fitted with a large star tip. Pipe small swirls or kisses onto the baking sheet and lightly sprinkle with more crushed candy cane.
  5. Bake for 1 hour, then turn off the oven and leave the meringues inside for another hour to dry out completely. Do not open the oven during this time.
  6. Once cool, dust lightly with powdered sugar for a snow effect. Serve or store in an airtight container.
