  • ½ cup all-purpose flour (for crumble)
  • ½ cup light brown sugar
  • ½ tsp cinnamon
  • ¼ cup unsalted butter, cold and cubed (for crumble)
  • Powdered sugar, for dusting (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9×9-inch baking pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, cream together butter and sugar until fluffy.
  4. Beat in eggs one at a time, then stir in vanilla.
  5. Mix in yogurt until smooth.
  6. Gradually fold in dry ingredients until just combined. Spread batter evenly in the pan.
  7. Arrange peach slices evenly over the batter.
  8. If using jam, spoon small dollops between peach slices and lightly swirl with a knife.
  9. In a bowl, mix flour, brown sugar, and cinnamon for the crumble.
  10. Cut in cold butter until mixture resembles coarse crumbs.
  11. Sprinkle crumble evenly over peaches.
  12. Bake for 40–45 minutes, or until a toothpick inserted in the center comes out clean.
  13. Let cool slightly before slicing.
  14. Dust with powdered sugar before serving.
