Oreo Brookies are a delicious layered dessert combining brownie, cookie, and Oreo layers for a delightful treat.

- ½ cup (115 g) unsalted butter, softened
- ½ cup (100 g) brown sugar
- ¼ cup (50 g) granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 1¼ cups (155 g) all-purpose flour
- ½ tsp baking soda
- ¼ tsp salt
- ½ cup (90 g) semi-sweet chocolate chips
- About 16 Oreo cookies (whole, not crushed)
- ½ cup (115 g) unsalted butter, melted
- 1 cup (200 g) granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- ⅓ cup (40 g) unsweetened cocoa powder
- ½ cup (65 g) all-purpose flour
- ¼ tsp salt
- ½ tsp baking powder
- Extra chocolate chips (for the top, optional)
Instructions
- Preheat the oven to 350°F (175°C). Line an 8×8-inch (20×20 cm) baking pan with parchment paper and lightly grease it.
- In a bowl, beat the butter, brown sugar, and granulated sugar until light and creamy. Add the egg and vanilla, and beat again. Mix in the flour, baking soda, and salt until combined. Stir in the chocolate chips. Spread the dough evenly in the bottom of the prepared pan.
- Arrange whole Oreo cookies in a single layer on top of the cookie dough, pressing them gently.
- In another bowl, whisk together melted butter and sugar until smooth. Add eggs and vanilla, whisk until glossy. Sift in cocoa powder, flour, baking powder, and salt. Stir until combined (do not overmix).
- Pour the brownie batter over the Oreo layer, spreading evenly. Sprinkle extra chocolate chips on top if desired.
- Bake for 35–40 minutes, until the top looks set and a toothpick inserted in the center comes out mostly clean (a few fudgy crumbs are fine). Cool completely in the pan before cutting into squares.

- Ensure the butter is softened for the cookie dough layer for better mixing.
- Do not overmix the brownie batter to maintain a fudgy texture.
- Let the brookies cool completely for easier cutting.
