Description

A simple and irresistible treat made with coconut and chocolate, perfect for satisfying your sweet tooth without baking.


Ingredients

  • 2¼ cups fine desiccated/shredded coconut (plus extra for rolling)
  • ⅔ cup (200 g) sweetened condensed milk
  • 1 tsp vanilla extract
  • Pinch of salt
  • 4 oz (115 g) semi-sweet or dark chocolate (for filling)
  • Optional: extra melted chocolate for drizzling

Instructions

  1. Melt chocolate in a heatproof bowl over a pot of simmering water (double boiler) or in the microwave in 20-second intervals, stirring until smooth.
  2. Let cool slightly until thickened but still spoonable.
  3. In a large bowl, mix shredded coconut, sweetened condensed milk, vanilla extract, and salt until fully combined. The mixture should be sticky but able to hold its shape.
  4. Scoop about 1 tbsp of coconut mixture and flatten it in your palm. Place ½ tsp of melted chocolate in the center, then fold the coconut mixture around it, rolling into a ball to fully enclose the chocolate. Repeat with remaining mixture.
  5. Roll each ball in extra shredded coconut to coat. Optional: drizzle with melted chocolate for decoration.
  6. Place balls on a parchment-lined tray and refrigerate for at least 30 minutes to firm up. Store in an airtight container in the fridge for up to 1 week.
