- 2¼ cups fine desiccated/shredded coconut (plus extra for rolling)
- ⅔ cup (200 g) sweetened condensed milk
- 1 tsp vanilla extract
- Pinch of salt
- 4 oz (115 g) semi-sweet or dark chocolate (for filling)
- Optional: extra melted chocolate for drizzling
Instructions
- Melt chocolate in a heatproof bowl over a pot of simmering water (double boiler) or in the microwave in 20-second intervals, stirring until smooth.
- Let cool slightly until thickened but still spoonable.
- In a large bowl, mix shredded coconut, sweetened condensed milk, vanilla extract, and salt until fully combined. The mixture should be sticky but able to hold its shape.
- Scoop about 1 tbsp of coconut mixture and flatten it in your palm. Place ½ tsp of melted chocolate in the center, then fold the coconut mixture around it, rolling into a ball to fully enclose the chocolate. Repeat with remaining mixture.
- Roll each ball in extra shredded coconut to coat. Optional: drizzle with melted chocolate for decoration.
- Place balls on a parchment-lined tray and refrigerate for at least 30 minutes to firm up. Store in an airtight container in the fridge for up to 1 week.
