Description

Ingredients

  • 2 pounds beef chuck roast, cut into 1-inch cubes
  • 4 medium carrots, sliced
  • 3 medium potatoes, diced
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 1 tablespoon olive oil (optional, for browning beef)
  • 2 tablespoons cornstarch (optional, for thickening)
  • 2 tablespoons water (optional, for thickening)

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Add beef cubes seasoned with salt and pepper, and sear until browned on all sides, about 3-4 minutes. Transfer cooked beef to the slow cooker.
  2. Add sliced carrots, diced potatoes, chopped onion, and minced garlic to the slow cooker, stirring gently to combine.
  3. Pour in beef broth and Worcestershire sauce, then add dried thyme and rosemary. Stir gently to ensure all ingredients are well coated.
  4. Cover and cook on low heat for about 8 hours, allowing flavors to meld and beef to tenderize.
  5. If thickening, mix cornstarch and water to create a slurry, then stir into the stew about 30 minutes before serving. Cook uncovered until thickened.
  6. Taste and adjust seasoning with additional salt and pepper as needed. Serve hot, garnished with fresh parsley if desired.
