  • ½ tsp paprika or chili flakes (optional, for flavor and color)
  • 1012 slices of soft sandwich bread (white, whole wheat, or multigrain)
  • Fresh lettuce leaves
  • Butter, for spreading (optional)
  • Toothpicks or mini skewers for serving

Instructions

  1. In a mixing bowl, combine the chopped vegetables, cream cheese, mayonnaise, mustard, chives, and seasoning. Mix until creamy and well combined. Adjust salt and pepper to taste. Chill in the refrigerator for 10–15 minutes to firm up slightly.
  2. Trim the crusts from each slice of bread for clean edges. If you like, lightly butter one side of each slice — this helps prevent sogginess. Cut each slice into squares or rectangles depending on your serving style.
  3. Spread a generous spoonful of the creamy veggie filling over one slice. Top with another slice of bread and press gently to seal. Insert a toothpick through the center and add a small piece of lettuce on top for a decorative and crunchy touch.
  4. Arrange the sandwiches on a platter. Cover with a damp paper towel and refrigerate for 30 minutes before serving to keep them moist and fresh.
