Mini Margherita Cottage Cheese Pizzettas are easy snacks that combine creamy cottage cheese with fresh toppings on a crispy base.

- 4 mini bread rounds (or halved English muffins, or mini naan)
- 1 tbsp olive oil
- ½ tsp garlic powder
- ½ cup cottage cheese (blended until creamy)
- ½ cup shredded mozzarella cheese
- 1–2 Roma tomatoes, thinly sliced
- Salt & pepper to taste
- ¼ tsp dried oregano or Italian seasoning
- Fresh basil leaves, thinly sliced
- Optional: a drizzle of olive oil or balsamic glaze
Instructions
- Preheat oven to 400°F (200°C).
- Brush bread rounds lightly with olive oil and sprinkle with garlic powder. Toast in the oven for 3–4 minutes until slightly crisp.
- Blend cottage cheese until smooth (use a food processor or immersion blender). Spread a spoonful of creamy cottage cheese mixture over each toasted base.
- Top each base with a few tomato slices and sprinkle with salt, pepper, and oregano. Add shredded mozzarella generously over the top.
- Return to the oven and bake for 8–10 minutes, or until cheese is melted and golden brown. Broil for an extra 1–2 minutes for bubbly, browned cheese (optional).
- Top with fresh basil and a drizzle of olive oil or balsamic glaze before serving. Serve hot as a snack, appetizer, or light meal.

- For a gluten-free option, use gluten-free mini bread or naan.
- Feel free to customize toppings with your favorite vegetables or herbs.
