Mini Jammy Dodger Strawberry Cheesecakes are a delightful dessert combining creamy cheesecake with a crunchy biscuit base, topped with strawberry jam and garnished with Jammy Dodger biscuits.
Ingredients

- 200g digestive biscuits (or Golden Oreos), crushed
- 80g unsalted butter, melted
- 300g cream cheese, softened
- 150ml double cream (heavy cream), whipped to soft peaks
- 100g icing sugar (powdered sugar)
- 1 tsp vanilla extract
- 150g fresh strawberries, sliced
- 100g strawberry jam or strawberry compote
- Whipped cream, for piping
- Jammy Dodger biscuits (or Golden Oreos), for garnish
- Crushed freeze-dried strawberries or biscuit crumbs, for sprinkling
Instructions
- Mix crushed biscuits with melted butter until combined.
- Press firmly into the base of mini cheesecake molds or muffin tins lined with parchment strips.
- Chill in the fridge while you prepare the filling.
- Beat cream cheese with icing sugar and vanilla until smooth.
- Gently fold in whipped cream until fluffy.
- Add strawberry slices and fold through the mixture.
- Spoon filling over the chilled biscuit bases and smooth the tops.
- Refrigerate for at least 4 hours (or overnight) to set.
- Once set, spoon a little strawberry jam or compote on top.
- Pipe whipped cream swirls.
- Decorate with a Jammy Dodger (or Oreo) biscuit and sprinkle crushed freeze-dried strawberries for a pop of color.
- Carefully unmold and place on a serving plate.
- Best enjoyed chilled!
