Description

Mini Jammy Dodger Strawberry Cheesecakes are a delightful dessert combining creamy cheesecake with a crunchy biscuit base, topped with strawberry jam and garnished with Jammy Dodger biscuits.


Ingredients

  • 200g digestive biscuits (or Golden Oreos), crushed
  • 80g unsalted butter, melted
  • 300g cream cheese, softened
  • 150ml double cream (heavy cream), whipped to soft peaks
  • 100g icing sugar (powdered sugar)
  • 1 tsp vanilla extract
  • 150g fresh strawberries, sliced
  • 100g strawberry jam or strawberry compote
  • Whipped cream, for piping
  • Jammy Dodger biscuits (or Golden Oreos), for garnish
  • Crushed freeze-dried strawberries or biscuit crumbs, for sprinkling

Instructions

  1. Mix crushed biscuits with melted butter until combined.
  2. Press firmly into the base of mini cheesecake molds or muffin tins lined with parchment strips.
  3. Chill in the fridge while you prepare the filling.
  4. Beat cream cheese with icing sugar and vanilla until smooth.
  5. Gently fold in whipped cream until fluffy.
  6. Add strawberry slices and fold through the mixture.
  7. Spoon filling over the chilled biscuit bases and smooth the tops.
  8. Refrigerate for at least 4 hours (or overnight) to set.
  9. Once set, spoon a little strawberry jam or compote on top.
  10. Pipe whipped cream swirls.
  11. Decorate with a Jammy Dodger (or Oreo) biscuit and sprinkle crushed freeze-dried strawberries for a pop of color.
  12. Carefully unmold and place on a serving plate.
  13. Best enjoyed chilled!
