Description

Delightful no-bake Mini Grinch Cheesecakes that are perfect for the holiday season.


Ingredients

  • 1 ½ cups (150g) graham cracker crumbs
  • 5 tbsp (70g) melted butter
  • 2 tbsp (25g) sugar
  • 16 oz (450g) cream cheese, softened
  • 3/4 cup (90g) powdered sugar
  • 1 cup (240 ml) heavy whipping cream (cold)
  • 1 tsp vanilla extract
  • 12 drops green food coloring (or matcha powder for natural green)
  • Optional: 1 tsp lime zest for a fresh twist
  • Extra whipped cream for topping
  • Red candy hearts (or red fondant hearts) for decoration

Instructions

  1. Mix graham crumbs, sugar, and melted butter until sandy. Press into mini cheesecake molds or lined muffin cups. Freeze for 10 minutes to set.
  2. Beat cream cheese until smooth and fluffy. Add powdered sugar and vanilla, mixing well. In another bowl, whip heavy cream to stiff peaks and fold into the cream cheese mixture. Add green coloring until bright “Grinch green.”
  3. Spoon filling over crusts and smooth the tops. Chill for 3 hours or overnight for the best set.
  4. Pipe whipped cream on top and place one red heart on each. Serve cold and enjoy!

Notes

  • For a baked version, replace heavy whipping cream with 1 large egg and 1/4 cup sour cream, and bake at 325°F (160°C) for 14–17 minutes.
  • Chill for 2–4 hours before decorating if baking.
  • Use gel food coloring for the best vibrant green.
  • Press the crust firmly so it doesn’t crumble when unmolding.
  • Overnight chilling results in perfect clean slices.
  • Add 1–2 tsp matcha for a natural green color and flavor.
