A delicious twist on traditional meatloaf, these Meatloaf Cupcakes with Garlic-Mash are perfect for a fun and tasty meal.

- 1 ½ lb (680 g) ground beef (or turkey)
- ½ cup fine breadcrumbs
- ¼ cup milk
- 1 egg
- ½ cup onion, finely diced
- 2 cloves garlic, minced
- ¼ cup ketchup (plus extra for topping)
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- 2 cups mashed potatoes (warm)
- 2 tbsp unsalted butter
- 2 cloves roasted or sautéed garlic, mashed
- ¼ cup cream or milk
- Salt & pepper, to taste
- Toasted breadcrumbs or crispy fried onions (for garnish)
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
- In a large bowl, combine ground meat, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper. Mix until just combined.
- Scoop the meat mixture evenly into muffin cups, pressing lightly. Spread a small spoonful of ketchup over each.
- Bake for 20–25 minutes, or until cooked through (internal temp 160°F / 70°C). Drain excess grease if needed.
- Mix mashed potatoes with butter, roasted garlic, and cream until smooth and fluffy. Season to taste.
- Pipe or spoon garlic mashed potatoes on top of each meatloaf “cupcake.”
- Sprinkle with toasted breadcrumbs or crispy onions and fresh parsley. Serve warm.
Notes
- For a healthier option, use ground turkey instead of beef.
- Feel free to add your favorite herbs to the meatloaf mixture for extra flavor.
- These cupcakes can be made ahead of time and reheated before serving.
