Description

A delicious twist on traditional meatloaf, these Meatloaf Cupcakes with Garlic-Mash are perfect for a fun and tasty meal.


Ingredients

  • 1 ½ lb (680 g) ground beef (or turkey)
  • ½ cup fine breadcrumbs
  • ¼ cup milk
  • 1 egg
  • ½ cup onion, finely diced
  • 2 cloves garlic, minced
  • ¼ cup ketchup (plus extra for topping)
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 cups mashed potatoes (warm)
  • 2 tbsp unsalted butter
  • 2 cloves roasted or sautéed garlic, mashed
  • ¼ cup cream or milk
  • Salt & pepper, to taste
  • Toasted breadcrumbs or crispy fried onions (for garnish)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin.
  2. In a large bowl, combine ground meat, breadcrumbs, milk, egg, onion, garlic, ketchup, Worcestershire sauce, salt, and pepper. Mix until just combined.
  3. Scoop the meat mixture evenly into muffin cups, pressing lightly. Spread a small spoonful of ketchup over each.
  4. Bake for 20–25 minutes, or until cooked through (internal temp 160°F / 70°C). Drain excess grease if needed.
  5. Mix mashed potatoes with butter, roasted garlic, and cream until smooth and fluffy. Season to taste.
  6. Pipe or spoon garlic mashed potatoes on top of each meatloaf “cupcake.”
  7. Sprinkle with toasted breadcrumbs or crispy onions and fresh parsley. Serve warm.

Notes

  • For a healthier option, use ground turkey instead of beef.
  • Feel free to add your favorite herbs to the meatloaf mixture for extra flavor.
