Description
Mango Crumble Bars are a delicious and easy-to-make dessert featuring a sweet mango filling topped with a buttery crumble.

- 1½ cups (190g) all-purpose flour
- 1 cup (100g) old-fashioned oats
- ⅓ cup (70g) light brown sugar
- ½ cup (100g) granulated sugar
- ½ tsp baking powder
- ¼ tsp salt
- ¾ cup (170g) unsalted butter, melted
- 2 cups fresh or frozen diced mango (thawed & drained if frozen)
- ¼ cup (50g) granulated sugar
- 1 tbsp lemon juice
- 2 tsp cornstarch (mixed with 2 tsp water to make slurry)
Instructions
- Preheat oven to 350°F (175°C) and grease and line an 8×8-inch baking pan with parchment paper.
- In a large bowl, combine flour, oats, brown sugar, granulated sugar, baking powder, and salt. Pour in melted butter and stir until the mixture resembles coarse crumbs.
- In a saucepan over medium heat, combine diced mango, sugar, and lemon juice. Cook for 3–4 minutes until juicy, then stir in cornstarch slurry and cook 1–2 more minutes until thickened. Remove from heat.
- Press two-thirds of the crumble mixture evenly into the bottom of the prepared pan. Spread the mango filling evenly over the base and sprinkle remaining crumble mixture over the top.
- Bake for 30–35 minutes or until the top is golden and set.
- Let bars cool completely in the pan, then use parchment to lift them out and cut into squares.
Notes
- For best results, use ripe mangoes for the filling.
- These bars can be stored in an airtight container for up to 5 days.
- Feel free to add nuts or coconut to the crumble for added texture.
