Description
Lorna Doone Shortbread Cheesecake Bars are a delicious dessert combining a buttery shortbread crust with a creamy cheesecake filling, topped with a drizzle of white chocolate.

- 1 (11-oz) package Lorna Doone shortbread cookies, crushed
- ½ cup (113 g) unsalted butter, melted
- 2 tbsp sugar
- 24 oz (675 g) cream cheese, room temperature
- ¾ cup (150 g) sugar
- 2 large eggs, room temperature
- ½ cup (120 g) sour cream
- 2 tsp vanilla extract
- ½ cup white chocolate, melted (optional)
- 1 tsp vegetable oil (to thin, if needed, optional)
Instructions
- Preheat oven to 325°F (163°C). Line a 9×13-inch baking pan with parchment paper.
- Crush cookies into fine crumbs. Mix with melted butter and 2 tbsp sugar.
- Press mixture firmly into the bottom of the pan to form the crust. Set aside about ¾ cup of crumbs for topping.
- Beat cream cheese and sugar until smooth and creamy.
- Add eggs one at a time, mixing well after each addition.
- Mix in sour cream and vanilla until combined.
- Pour cheesecake batter over prepared crust.
- Sprinkle reserved cookie crumbs evenly on top.
- Bake for 35–40 minutes, or until the center is just set (slightly jiggly is okay).
- Remove from oven and let cool completely, then refrigerate at least 4 hours or overnight.
- Melt white chocolate and drizzle over chilled bars.
- Slice into squares and serve.
Notes
- For best results, use room temperature ingredients.
- Chilling the bars overnight enhances the flavor and texture.
- Feel free to adjust the amount of white chocolate drizzle to your preference.
