Description

Lorna Doone Shortbread Cheesecake Bars are a delicious dessert combining a buttery shortbread crust with a creamy cheesecake filling, topped with a drizzle of white chocolate.


Ingredients

  • 1 (11-oz) package Lorna Doone shortbread cookies, crushed
  • ½ cup (113 g) unsalted butter, melted
  • 2 tbsp sugar
  • 24 oz (675 g) cream cheese, room temperature
  • ¾ cup (150 g) sugar
  • 2 large eggs, room temperature
  • ½ cup (120 g) sour cream
  • 2 tsp vanilla extract
  • ½ cup white chocolate, melted (optional)
  • 1 tsp vegetable oil (to thin, if needed, optional)

Instructions

  1. Preheat oven to 325°F (163°C). Line a 9×13-inch baking pan with parchment paper.
  2. Crush cookies into fine crumbs. Mix with melted butter and 2 tbsp sugar.
  3. Press mixture firmly into the bottom of the pan to form the crust. Set aside about ¾ cup of crumbs for topping.
  4. Beat cream cheese and sugar until smooth and creamy.
  5. Add eggs one at a time, mixing well after each addition.
  6. Mix in sour cream and vanilla until combined.
  7. Pour cheesecake batter over prepared crust.
  8. Sprinkle reserved cookie crumbs evenly on top.
  9. Bake for 35–40 minutes, or until the center is just set (slightly jiggly is okay).
  10. Remove from oven and let cool completely, then refrigerate at least 4 hours or overnight.
  11. Melt white chocolate and drizzle over chilled bars.
  12. Slice into squares and serve.

  • Chilling the bars overnight enhances the flavor and texture.
