Description

Tiny golden potatoes sliced Hasselback-style, baked until crisp, then loaded with melted cheddar, sour cream, crispy bacon, and chives. The ultimate bite-sized comfort food!


Ingredients

  • 1620 baby potatoes (Yukon gold or mini potatoes)
  • 3 tbsp melted butter
  • 2 tbsp olive oil
  • Salt & pepper
  • ½ tsp garlic powder
  • ½ tsp paprika (optional)
  • 1 cup shredded cheddar cheese
  • 45 slices cooked crispy bacon, crumbled
  • ½ cup sour cream
  • Fresh chives, finely chopped

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Wash potatoes and pat dry.
  3. Place each potato between two wooden spoons or chopsticks.
  4. Slice thin cuts across the potato — do not cut all the way through.
  5. Arrange potatoes on a baking tray.
  6. Mix melted butter + olive oil + salt + pepper + garlic powder.
  7. Brush generously over the potatoes, making sure it gets inside the slices.
  8. Bake for 35–45 minutes, until crispy on the edges and tender inside.
  9. Remove tray from the oven.
  10. Sprinkle each potato generously with shredded cheddar.
  11. Return to oven for 5 minutes, until cheese melts beautifully.
  12. Top each potato with a small spoon of sour cream, a pinch of crispy bacon, and a sprinkle of fresh chives.
