- 16–20 baby potatoes (Yukon gold or mini potatoes)
- 3 tbsp melted butter
- 2 tbsp olive oil
- Salt & pepper
- ½ tsp garlic powder
- ½ tsp paprika (optional)
- 1 cup shredded cheddar cheese
- 4–5 slices cooked crispy bacon, crumbled
- ½ cup sour cream
- Fresh chives, finely chopped
Instructions
- Preheat oven to 200°C (400°F).
- Wash potatoes and pat dry.
- Place each potato between two wooden spoons or chopsticks.
- Slice thin cuts across the potato — do not cut all the way through.
- Arrange potatoes on a baking tray.
- Mix melted butter + olive oil + salt + pepper + garlic powder.
- Brush generously over the potatoes, making sure it gets inside the slices.
- Bake for 35–45 minutes, until crispy on the edges and tender inside.
- Remove tray from the oven.
- Sprinkle each potato generously with shredded cheddar.
- Return to oven for 5 minutes, until cheese melts beautifully.
- Top each potato with a small spoon of sour cream, a pinch of crispy bacon, and a sprinkle of fresh chives.

- For extra flavor, consider adding herbs or spices to the butter mixture.
