Delicious Korean BBQ Meatballs coated in a savory sauce, perfect for any occasion.

- 1 lb (450 g) ground beef (or beef + pork mix)
- ½ cup breadcrumbs (panko preferred)
- 1 large egg
- 2 green onions, finely chopped (plus more for garnish)
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tsp gochujang (Korean chili paste, optional for heat)
- ½ tsp black pepper
- ½ cup soy sauce (for the sauce)
- ⅓ cup brown sugar
- 2 tbsp rice vinegar
- 2 tbsp honey
- 2 tbsp sesame oil (for the sauce)
- 2 cloves garlic, minced (for the sauce)
- 1 tbsp ginger, grated (for the sauce)
- 1 tbsp cornstarch mixed with 2 tbsp water (slurry, for thickening)
- Sesame seeds (for garnish)
- Extra green onions, sliced (for garnish)
Instructions
- In a large bowl, combine ground beef, breadcrumbs, egg, garlic, ginger, soy sauce, sesame oil, gochujang, and black pepper. Mix gently until combined (don’t overmix or the meatballs will be tough). Roll into bite-sized meatballs.
- Heat a large skillet over medium-high heat with a drizzle of oil. Cook meatballs until browned on all sides and fully cooked through (about 8–10 minutes). Remove from skillet and set aside.
- In the same skillet, add soy sauce, brown sugar, rice vinegar, honey, sesame oil, garlic, and ginger. Bring to a simmer, then stir in cornstarch slurry. Cook until thickened and glossy.
- Return meatballs to the skillet and toss to coat in the sauce.
- Sprinkle with sesame seeds and chopped green onions. Serve hot with steamed rice, noodles, or as a party appetizer.
Notes
- For a spicier kick, increase the amount of gochujang.
- These meatballs can be made ahead of time and reheated before serving.
- Serve with a side of kimchi for an authentic Korean experience.
