Kinder Bueno Chocolate Cookie Sandwiches are a delightful treat combining rich chocolate cookies with a creamy filling and topped with Kinder Bueno pieces.

- 1 cup (230 g) unsalted butter, softened
- 1 cup (200 g) brown sugar
- ½ cup (100 g) granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 cups (250 g) all-purpose flour
- 1 cup (80 g) cocoa powder
- 1 tsp baking soda
- ½ tsp baking powder
- ½ tsp salt
- 1 cup (225 g) mascarpone or cream cheese, softened
- ½ cup (115 g) unsalted butter, softened
- 2 cups (250 g) powdered sugar
- 1 tsp vanilla extract
- 1 cup milk chocolate, melted
- Kinder Bueno bars, cut into small pieces
- Sea salt flakes (optional)
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment.
- Beat butter, brown sugar, and granulated sugar until creamy.
- Add eggs and vanilla, beat until smooth.
- Whisk together flour, cocoa, baking soda, baking powder, and salt.
- Gradually add dry mix into wet ingredients.
- Scoop dough and roll into balls (about 2 tbsp each). Flatten slightly.
- Bake 10–12 minutes until set but still soft. Let cool fully.
- Beat cream cheese/mascarpone with butter until smooth.
- Add vanilla and powdered sugar, beat until fluffy.
- Pipe or spread filling onto the bottom of one cookie.
- Drizzle melted chocolate over filling.
- Top with another cookie.
- Place a chunk of Kinder Bueno on top, drizzle extra chocolate, and sprinkle with sea salt flakes.
Notes
- For a richer flavor, use Kinder chocolate for the melted chocolate layer.
- Allow cookies to cool completely before assembling to prevent melting the filling.
- Sea salt flakes enhance the flavor but are optional.
