Ingredients

  • 8 oz (225 g) cream cheese, softened
  • 1 cup (240 ml) coconut cream (or full-fat coconut milk)
  • ½ cup (120 ml) pineapple juice
  • ½ cup (100 g) sugar
  • 1 tsp vanilla extract
  • Zest of 1 lime
  • 2 tbsp fresh lime juice
  • 1 cup (240 ml) heavy cream, whipped
  • 1 (14 oz / 395 g) can sweetened condensed milk
  • ½ cup (120 ml) fresh key lime juice (or regular lime juice)
  • 2 egg yolks (optional, for richness — omit for no-bake version)
  • 1 tsp lime zest
  • Whipped cream (for topping)
  • Lime zest + lime slices (for garnish)
  • Toasted coconut flakes (optional, for garnish)

Instructions

  1. Mix graham cracker crumbs, sugar, and melted butter until sandy. Press a layer into the bottom of serving glasses or jars.
  2. Beat cream cheese until smooth. Add coconut cream, pineapple juice, sugar, vanilla, lime zest, and lime juice. Mix until silky. Fold in whipped cream gently to keep it airy.
  3. No-bake option: Mix condensed milk, lime juice, and zest until thickened. Chill. Classic option: Whisk in egg yolks, pour into a dish, and bake at 325°F (160°C) for 12–15 minutes. Cool completely.
  4. Spoon crust layer into bottom of each glass. Add cheesecake piña colada cream. Layer key lime mixture. Repeat if desired for taller parfaits. Top generously with whipped cream, lime zest, and slices.

Notes

  • For a no-bake version, omit the egg yolks in the key lime layer.
