- Optional: a pinch of cayenne or smoked paprika for heat
Instructions
- Make the Honey Butter: In a small bowl, mix butter, honey, and salt until creamy. Add cayenne or smoked paprika for a spicy note if desired. Set aside at room temperature (or refrigerate if making ahead).
- Prepare the Waffle Batter: In a mixing bowl, whisk together cornmeal, flour, baking powder, sugar, and salt. In another bowl, combine buttermilk, eggs, and melted butter. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the shredded cheddar cheese, diced jalapeño, and parsley.
- Cook the Waffles: Preheat your waffle iron and lightly grease it. Pour in the batter (about ½ cup per waffle, depending on your iron). Cook until golden brown and crisp — about 4–5 minutes per batch. Keep warm in a low oven (200°F / 93°C) while you make the rest.
- Serve: Stack waffles high, top with a pat of honey butter, and drizzle generously with extra honey. Garnish with fresh parsley or a few thin jalapeño slices for presentation.
