- 8 oz halloumi cheese
- 1 medium zucchini (about 1 cup)
- 1 red bell pepper (about 1 cup)
- 1 cup cherry tomatoes
- 1 small red onion
- 2 tbsp olive oil
- 1 tsp dried oregano

Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Chop zucchini, bell pepper, cherry tomatoes, and red onion into bite-sized pieces.
- In a large bowl, toss the chopped veggies with olive oil, oregano, salt, and pepper until evenly coated.
- Cut halloumi into thick slices and gently add to the veggie mixture.
- Spread everything in a single layer on the prepared baking sheet.
- Bake for 25-30 minutes or until halloumi is golden brown and veggies are tender.
