Description

This baked halloumi with vegetables is a delicious and healthy dish that’s easy to prepare!


Ingredients

  • 8 oz halloumi cheese
  • 1 medium zucchini (about 1 cup)
  • 1 red bell pepper (about 1 cup)
  • 1 cup cherry tomatoes
  • 1 small red onion
  • 2 tbsp olive oil
  • 1 tsp dried oregano

  • to taste pepper

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Chop zucchini, bell pepper, cherry tomatoes, and red onion into bite-sized pieces.
  3. In a large bowl, toss the chopped veggies with olive oil, oregano, salt, and pepper until evenly coated.
  4. Cut halloumi into thick slices and gently add to the veggie mixture.
  5. Spread everything in a single layer on the prepared baking sheet.
  6. Bake for 25-30 minutes or until halloumi is golden brown and veggies are tender.
