- 3–4 boneless, skinless chicken breasts
- 4 cloves fresh garlic, minced
- 1 can (14 oz) diced tomatoes (packed in juice)
- 4 cups low-sodium chicken broth
- 1 cup freshly grated parmesan cheese
- 2 tsp Italian seasoning
- Fresh basil leaves
- Crusty bread or croutons
Instructions
- Chop garlic and keep chicken breasts whole.
- Layer whole chicken at the bottom, followed by diced tomatoes and minced garlic.
- Add chicken broth until ingredients are just covered.
- Sprinkle Italian seasoning generously over the top.
- Set crockpot on low heat for about 6 hours.
- Remove chicken, shred with forks, return to pot with parmesan cheese, stir to combine.
- Serve hot with fresh basil on top.
