- 4 oz (115 g) cream cheese, softened (for glaze)
- ¼ cup (60 g) unsalted butter, softened (for glaze)
- 1 ½ cups (180 g) powdered sugar (for glaze)
- 1 tsp vanilla extract (for glaze)
- 2–3 tbsp milk (to adjust glaze consistency)
Instructions
- Prepare the Dough: In a bowl, combine warm milk and yeast. Let sit for 5–10 minutes until foamy. Add sugar, melted butter, eggs, vanilla, and red food coloring. Mix well. Gradually add flour, cocoa powder, and salt. Knead until soft and elastic (8–10 minutes by hand or 5 minutes with a mixer). Place dough in a greased bowl, cover, and let rise in a warm spot for 1–2 hours, until doubled in size.
- Make the Filling: Mix softened butter, brown sugar, cocoa powder, and cinnamon into a paste.
- Assemble the Rolls: Roll dough into a large rectangle (about 12×18 inches). Spread filling evenly over the dough. Roll tightly from the long edge into a log. Slice into 12 even rolls. Arrange rolls in a greased baking dish. Cover and let rise again for 30–45 minutes.
- Bake: Preheat oven to 350°F (175°C). Bake rolls for 22–25 minutes, until fluffy and slightly golden.
- Make the Glaze: Beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and milk. Mix until creamy and pourable.
- Finish: Spread warm rolls generously with cream cheese glaze. Sprinkle with red velvet crumbs for decoration (optional, as in your picture).
