- 8 oz (225 g) cream cheese, room temperature
- ½ cup (120 ml) milk
- 3 tbsp (40 g) unsalted butter
- 6 large eggs, separated
- ½ cup (100 g) granulated sugar
- ¼ cup (30 g) cake flour
- 2 tbsp (15 g) cornstarch
- 1 tsp lemon juice (optional, for stability)
- Pinch of salt
Instructions
- Preheat oven to 320°F (160°C) and prepare an 8-inch round cake pan by greasing and lining the bottom with parchment paper, then wrapping the outside with foil.
- In a heatproof bowl over a double boiler, melt cream cheese, milk, and butter together until smooth. Remove from heat and let cool slightly.
- Whisk egg yolks into the cream cheese mixture until combined. Sift in cake flour and cornstarch, then mix until smooth.
- In a clean bowl, beat egg whites with a pinch of salt until foamy. Gradually add sugar and continue beating until soft peaks form. Add lemon juice (if using) and beat until medium-stiff peaks form.
- Gently fold the meringue into the yolk mixture in three additions, being careful not to deflate the batter.
- Pour batter into the prepared pan. Place pan in a larger baking dish and add hot water to come halfway up the sides. Bake for 25 minutes at 320°F (160°C), then reduce to 300°F (150°C) and bake for another 30–35 minutes, until set and lightly golden.
- Turn off the oven and leave the cake inside with the door slightly open for 15 minutes to prevent collapse. Remove from oven, take out of the water bath, and let cool completely before removing from the pan.
- Dust with powdered sugar and top with whipped cream if desired.
