Delicious peanut butter buckeyes coated in chocolate, perfect for a sweet treat!


Ingredients

  • 1 cup natural creamy peanut butter
  • 3/4 cup almond flour
  • 1/4 cup pure maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon fine sea salt
  • 1 cup dark chocolate chips
  • 1 teaspoon coconut oil

Instructions

  1. In a medium bowl, mix together peanut butter, almond flour, maple syrup, vanilla extract, and sea salt until a thick dough forms.
  2. Line a baking sheet with parchment paper. Scoop about 1 tablespoon of dough per buckeye and roll into balls. Place on prepared baking sheet.
  3. Freeze the peanut butter balls for 20 minutes to firm up.
  4. In a microwave-safe bowl, melt the dark chocolate chips with coconut oil in 20-second intervals, stirring until smooth.
  5. Use a toothpick to dip each chilled peanut butter ball into the melted chocolate, leaving the top exposed. Place back on the baking sheet.
  6. Refrigerate until the chocolate is set, about 10 minutes.
  7. Enjoy or store in the fridge.
