Description

A delicious and easy recipe for grilled chicken thighs marinated in a flavorful soy sauce and pineapple juice marinade.


Ingredients

  • 1/2 cup soy sauce
  • 1/2 cup pineapple juice
  • 1/4 cup brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon sesame oil
  • 2 pounds boneless skinless chicken thighs
  • 2 tablespoons green onions, sliced (for garnish)
  • 1 tablespoon sesame seeds (for garnish)

Instructions

  1. In a medium bowl, whisk together soy sauce, pineapple juice, brown sugar, garlic, ginger, and sesame oil until the sugar dissolves.
  2. Place chicken thighs in a resealable bag or shallow dish. Pour marinade over chicken, seal, and refrigerate for at least 2 hours or overnight.
  3. Preheat a grill or skillet over medium-high heat. Lightly oil the grates or pan to prevent sticking.
  4. Remove chicken from marinade and grill for 5–6 minutes per side until fully cooked and nicely charred.
  5. Optional: Simmer leftover marinade in a saucepan until thickened to use as a glaze.
  6. Rest chicken for 5 minutes before slicing. Garnish with green onions and sesame seeds before serving.

Notes

  • For best results, marinate the chicken overnight.
  • This marinade also works well for other proteins like pork or tofu.
