A delicious and easy recipe for grilled chicken thighs marinated in a flavorful soy sauce and pineapple juice marinade.

- 1/2 cup soy sauce
- 1/2 cup pineapple juice
- 1/4 cup brown sugar
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon sesame oil
- 2 pounds boneless skinless chicken thighs
- 2 tablespoons green onions, sliced (for garnish)
- 1 tablespoon sesame seeds (for garnish)
Instructions
- In a medium bowl, whisk together soy sauce, pineapple juice, brown sugar, garlic, ginger, and sesame oil until the sugar dissolves.
- Place chicken thighs in a resealable bag or shallow dish. Pour marinade over chicken, seal, and refrigerate for at least 2 hours or overnight.
- Preheat a grill or skillet over medium-high heat. Lightly oil the grates or pan to prevent sticking.
- Remove chicken from marinade and grill for 5–6 minutes per side until fully cooked and nicely charred.
- Optional: Simmer leftover marinade in a saucepan until thickened to use as a glaze.
- Rest chicken for 5 minutes before slicing. Garnish with green onions and sesame seeds before serving.
Notes
- For best results, marinate the chicken overnight.
- This marinade also works well for other proteins like pork or tofu.
