Delicious butterscotch cupcakes topped with creamy frosting.
Ingredients

- 1 cup all-purpose flour
- 1 tsp baking powder
- 0 tsp baking soda
- 0 tsp salt
- 0 cup unsalted butter (softened)
- 0 cup brown sugar (packed)
- 0 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 0 cup cream soda
- 0 cup butterscotch chips
- 0 cup unsalted butter (softened)
- 2 cups powdered sugar
- 1 tsp vanilla extract
- 0 cup butterscotch sauce
- 2–3 tbsp heavy cream
Instructions
- Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
- Whisk together flour, baking powder, baking soda, and salt.
- Cream butter and sugars until light and fluffy. Add eggs and vanilla.
- Alternate adding dry ingredients and cream soda to the batter.
- Fold in butterscotch chips gently.
- Bake 18–22 minutes. Cool completely.
- Beat frosting ingredients until smooth and fluffy.
- Frost cupcakes and garnish as desired.
Notes
- These cupcakes can be stored in an airtight container for up to 3 days.
- For a richer flavor, use dark brown sugar instead of light brown sugar.
