- 1 cup buttermilk (room temperature)
- ½ cup vegetable oil
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup hot coffee (or hot water for milder flavor)
- 2 cups powdered sugar
- 3–4 tbsp milk
- 1 tsp vanilla extract
- Neon green food coloring (gel preferred)
- Candy eyeballs (various sizes for a spooky effect)
- Crushed chocolate cookies or candy (for “dirt”)
- Halloween sprinkles
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a Bundt pan.
- In a large bowl, whisk together flour, cocoa, sugar, baking soda, baking powder, and salt.
- Add buttermilk, oil, eggs, and vanilla. Mix until combined.
- Stir in hot coffee (batter will be thin). Pour into prepared pan.
- Bake for 45–55 minutes, or until a toothpick inserted comes out clean.
- Let cake cool for 10 minutes in the pan, then carefully invert onto a wire rack. Cool completely.
- Whisk powdered sugar, milk, and vanilla until smooth to make the glaze.
- Tint with green food coloring until it looks bright and slimy.
- Drizzle glaze over cooled cake, letting it drip down naturally.
- While glaze is still wet, press candy eyeballs into random spots.
- Sprinkle with cookie crumbs, candy bits, or Halloween sprinkles for extra monster vibes.
