- 1 cup creamed corn
- 3 large eggs
- 1 cup whole milk (or half-and-half for extra richness)
- ½ cup sour cream
- ¼ cup melted butter
- 2 tbsp sugar (optional but enhances flavor)
- 1 tsp salt
- ½ tsp black pepper
- ¼ cup all-purpose flour
- 1 tsp baking powder
- 1 ½ cups shredded cheddar cheese (or a cheddar–mozzarella mix)
- A pinch of smoked paprika (optional)
- ¼ cup finely chopped green onions (optional)
- ½ cup shredded mozzarella for extra creaminess (optional)
- A sprinkle of parsley for garnish (optional)
Instructions
- Preheat the oven to 350°F / 180°C and grease a 9×9-inch baking dish or medium casserole.
- In a large bowl, whisk together the eggs, milk, sour cream, melted butter, sugar, salt, and pepper.
- Stir in the corn kernels and creamed corn.
- Sprinkle the flour and baking powder over the mixture and stir until just combined — do NOT overmix.
- Fold in 1 cup of shredded cheddar cheese, reserving ½ cup for topping.
- Pour the mixture into the prepared baking dish and sprinkle the remaining cheese on top.
- Bake for 45–55 minutes, until the top is deep golden and slightly crispy, and the center is set but still soft and pudding-like. If you want an extra browned top, broil for 1–2 minutes at the end (watch closely!).
