  • 3 large eggs

  • ½ cup sour cream
  • ¼ cup melted butter
  • 2 tbsp sugar (optional but enhances flavor)
  • 1 tsp salt
  • ½ tsp black pepper
  • ¼ cup all-purpose flour
  • 1 tsp baking powder
  • 1 ½ cups shredded cheddar cheese (or a cheddar–mozzarella mix)
  • A pinch of smoked paprika (optional)
  • ¼ cup finely chopped green onions (optional)
  • ½ cup shredded mozzarella for extra creaminess (optional)
  • A sprinkle of parsley for garnish (optional)

Instructions

  1. Preheat the oven to 350°F / 180°C and grease a 9×9-inch baking dish or medium casserole.
  2. In a large bowl, whisk together the eggs, milk, sour cream, melted butter, sugar, salt, and pepper.
  3. Stir in the corn kernels and creamed corn.
  4. Sprinkle the flour and baking powder over the mixture and stir until just combined — do NOT overmix.
  5. Fold in 1 cup of shredded cheddar cheese, reserving ½ cup for topping.
  6. Pour the mixture into the prepared baking dish and sprinkle the remaining cheese on top.
  7. Bake for 45–55 minutes, until the top is deep golden and slightly crispy, and the center is set but still soft and pudding-like. If you want an extra browned top, broil for 1–2 minutes at the end (watch closely!).
