A flavorful and easy recipe for Garlic Herb Grilled Shrimp, perfect for summer grilling.

- 1 ½ lbs (700 g) large shrimp, peeled & deveined (tails on optional)
- 3 tbsp olive oil
- 3 tbsp unsalted butter, melted
- 4 garlic cloves, finely minced
- 2 tbsp fresh parsley, finely chopped
- 1 tbsp fresh cilantro, chopped (optional)
- 1 tbsp lemon juice (plus extra wedges for serving)
- ½ tsp chili flakes (optional, for heat)
- Salt and black pepper, to taste
Instructions
- In a bowl, whisk together olive oil, melted butter, garlic, parsley, cilantro, lemon juice, chili flakes, salt, and pepper. Add the shrimp, tossing well to coat. Cover and marinate in the refrigerator for 20–30 minutes (do not over-marinate or shrimp can become mushy).
- Preheat grill or grill pan to medium-high heat. Lightly oil the grates. Thread shrimp onto skewers (optional, easier for grilling). Grill shrimp for 2–3 minutes per side, until pink, opaque, and slightly charred.
- Transfer shrimp to a platter and drizzle with any remaining garlic herb butter. Garnish with extra parsley and serve with lemon wedges.
Notes
- Do not over-marinate the shrimp to avoid a mushy texture.
- Feel free to adjust the amount of chili flakes based on your heat preference.
- Using skewers can make grilling easier and prevent shrimp from falling through the grates.
