  • ½ cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries or blackberries
  • 2 cups powdered sugar
  • 34 tbsp milk
  • Gel food coloring (purple, pink, and blue)
  • Whipped cream (for decoration)
  • Star-shaped cookies
  • Edible pearls, sprinkles, and glitter
  • Extra fruit or berry syrup

Instructions

  1. Preheat oven to 175°C (350°F).
  2. Grease and line two 8-inch round cake pans.
  3. In a bowl, whisk flour, baking powder, and salt.
  4. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, then vanilla.
  5. Alternate adding flour mixture and milk until smooth.
  6. Divide batter into pans and bake for 25–30 minutes. Let cool completely.
  7. Whip cream with powdered sugar and vanilla until stiff peaks form.
  8. Gently fold in blueberries or blackberries for a galaxy swirl effect.
  9. Slice cooled cakes in half (for 4 thin layers).
  10. Spread whipped cream filling between layers. Add a few berries in each layer.
  11. Frost outside with a thin coat of whipped cream.
  12. Mix powdered sugar with milk until smooth and pourable.
  13. Separate into small bowls, tint with different gel colors (purple, pink, blue).
  14. Swirl colors together slightly, then pour over chilled cake to drip down sides.
  15. Pipe whipped cream swirls on top.
  16. Add star cookies, sprinkles, edible glitter, and extra berry syrup for the cosmic effect.
