Delightful Funfetti Sandwich Cookies filled with creamy vanilla buttercream.
Ingredients

- 2 cups (250 g) all-purpose flour
- 2 tbsp cornstarch
- 1 tsp baking powder
- ¼ tsp baking soda
- ½ tsp salt
- ¾ cup (170 g) unsalted butter, softened
- 1 cup (200 g) granulated sugar
- 1 large egg
- 1½ tsp vanilla extract
- ½ cup rainbow sprinkles (plus extra for topping)
- ½ cup (113 g) unsalted butter, softened (for filling)
- 2 cups (240 g) powdered sugar (for filling)
- 2–3 tbsp heavy cream or milk (for filling)
- 1 tsp vanilla extract (for filling)
Instructions
- In a medium bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.
- In a large mixing bowl, cream butter and sugar until light and fluffy.
- Beat in egg and vanilla extract.
- Gradually mix in dry ingredients until combined.
- Fold in sprinkles.
- Scoop 1–1½ tablespoon portions of dough and roll into balls.
- Place on a baking sheet, cover, and refrigerate for 30 minutes.
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- Place dough balls 2 inches apart and gently press down slightly.
- Top with extra sprinkles if desired.
- Bake for 9–11 minutes, or until edges are set but centers are still soft.
- Let cool completely before assembling.
- Beat butter until creamy for the filling.
- Gradually add powdered sugar, cream, and vanilla extract, beating until light and fluffy.
- Pipe or spread buttercream onto the flat side of one cookie.
- Top with another cookie, pressing gently to sandwich together.
Notes
- Chilling the dough helps prevent the cookies from spreading too much while baking.
- Feel free to add more sprinkles for a fun look!
