Delightful Funfetti Sandwich Cookies filled with creamy vanilla buttercream.


Ingredients

  • 2 cups (250 g) all-purpose flour
  • 2 tbsp cornstarch
  • 1 tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • ¾ cup (170 g) unsalted butter, softened
  • 1 cup (200 g) granulated sugar
  • 1 large egg
  • 1½ tsp vanilla extract
  • ½ cup rainbow sprinkles (plus extra for topping)
  • ½ cup (113 g) unsalted butter, softened (for filling)
  • 2 cups (240 g) powdered sugar (for filling)
  • 23 tbsp heavy cream or milk (for filling)
  • 1 tsp vanilla extract (for filling)

Instructions

  1. In a medium bowl, whisk together flour, cornstarch, baking powder, baking soda, and salt.
  2. In a large mixing bowl, cream butter and sugar until light and fluffy.
  3. Beat in egg and vanilla extract.
  4. Gradually mix in dry ingredients until combined.
  5. Fold in sprinkles.
  6. Scoop 1–1½ tablespoon portions of dough and roll into balls.
  7. Place on a baking sheet, cover, and refrigerate for 30 minutes.
  8. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  9. Place dough balls 2 inches apart and gently press down slightly.
  10. Top with extra sprinkles if desired.
  11. Bake for 9–11 minutes, or until edges are set but centers are still soft.
  12. Let cool completely before assembling.
  13. Beat butter until creamy for the filling.
  14. Gradually add powdered sugar, cream, and vanilla extract, beating until light and fluffy.
  15. Pipe or spread buttercream onto the flat side of one cookie.
  16. Top with another cookie, pressing gently to sandwich together.
