- 16 oz (450 g) cream cheese, softened
- 1 cup powdered sugar
- 1 cup heavy whipping cream, cold
- 1 tsp vanilla extract
- 1 cup whipped cream (or buttercream frosting)
- A few drops pink food coloring
- Rainbow sprinkles
Instructions
- Prepare funfetti cake mix as directed.
- Pour half the batter into a greased springform pan (about 9-inch).
- Bake at 350°F (175°C) for 20–25 minutes, or until set.
- Cool completely.
- Beat softened cream cheese with powdered sugar until smooth.
- In a separate bowl, whip heavy cream with vanilla until stiff peaks form.
- Fold whipped cream into cream cheese mixture.
- Gently fold in rainbow sprinkles.
- Spread cheesecake filling evenly over cooled cake bottom.
- Smooth the top and refrigerate for at least 4–6 hours (or overnight) until firm.
- Tint whipped cream/frosting with pink food coloring.
- Pipe swirls on top of the cheesecake.
- Sprinkle generously with rainbow sprinkles.
