Description

Ingredients

  • 1 box funfetti cake mix (plus eggs, oil, and water as package directs)
  • ½ cup rainbow sprinkles (extra for garnish)
  • 16 oz (450 g) cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy whipping cream, cold
  • 1 tsp vanilla extract
  • 1 cup whipped cream (or buttercream frosting)
  • A few drops pink food coloring
  • Rainbow sprinkles

Instructions

  1. Prepare funfetti cake mix as directed.
  2. Pour half the batter into a greased springform pan (about 9-inch).
  3. Bake at 350°F (175°C) for 20–25 minutes, or until set.
  4. Cool completely.
  5. Beat softened cream cheese with powdered sugar until smooth.
  6. In a separate bowl, whip heavy cream with vanilla until stiff peaks form.
  7. Fold whipped cream into cream cheese mixture.
  8. Gently fold in rainbow sprinkles.
  9. Spread cheesecake filling evenly over cooled cake bottom.
  10. Smooth the top and refrigerate for at least 4–6 hours (or overnight) until firm.
  11. Tint whipped cream/frosting with pink food coloring.
  12. Pipe swirls on top of the cheesecake.
  13. Sprinkle generously with rainbow sprinkles.
  14. Slice and enjoy this festive, creamy, and colorful dessert!
