- 4 tbsp butter
- 4 cups mini marshmallows
- 16 oz cream cheese (softened)
- ½ cup powdered sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream (whipped to stiff peaks)
Instructions
- Melt butter and marshmallows together in a large pot over low heat.
- Stir in Fruity Pebbles until fully coated.
- Press half the cereal mixture into the bottom and sides of a springform pan. Chill for 10 minutes to firm up.
- Beat cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped cream gently until light and fluffy.
- Spoon cheesecake filling into the crust. Top with remaining Fruity Pebbles mixture, pressing gently.
- Refrigerate for at least 3 hours or until firm. Slice and serve chilled!
