Ingredients

  • ¼ cup granulated sugar
  • ½ cup unsalted butter (melted)
  • 2 cups whole milk
  • ½ cup granulated sugar
  • ¼ cup cornstarch
  • 4 egg yolks
  • 1 tsp vanilla extract
  • 2 tbsp unsalted butter
  • 23 cups fresh strawberries (halved)
  • ¼ cup apricot jam or strawberry jam (warmed for glaze)
  • Fresh mint leaves (optional, for garnish)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Mix graham cracker crumbs, sugar, and melted butter until sandy.
  3. Press firmly into a tart pan with removable bottom.
  4. Bake for 10 minutes, then cool completely.
  5. In a saucepan, heat milk until warm (not boiling).
  6. In a bowl, whisk sugar, cornstarch, and egg yolks until pale.
  7. Slowly pour warm milk into egg mixture while whisking.
  8. Return to pan and cook over medium heat until thick and creamy.
  9. Remove from heat, stir in butter and vanilla.
  10. Pour into cooled crust and chill for 1–2 hours until set.
  11. Arrange strawberry halves neatly on top of the chilled cream filling.
  12. Warm jam until liquid, then brush over strawberries for a glossy finish.
  13. Garnish with mint leaves if desired.
  14. Chill until ready to slice and serve.
