- 1 ½ cups graham cracker crumbs (or crushed digestive biscuits)
- ¼ cup granulated sugar
- ½ cup unsalted butter (melted)
- 2 cups whole milk
- ½ cup granulated sugar
- ¼ cup cornstarch
- 4 egg yolks
- 1 tsp vanilla extract
- 2 tbsp unsalted butter
- 2–3 cups fresh strawberries (halved)
- ¼ cup apricot jam or strawberry jam (warmed for glaze)
- Fresh mint leaves (optional, for garnish)
Instructions
- Preheat oven to 350°F (175°C).
- Mix graham cracker crumbs, sugar, and melted butter until sandy.
- Press firmly into a tart pan with removable bottom.
- Bake for 10 minutes, then cool completely.
- In a saucepan, heat milk until warm (not boiling).
- In a bowl, whisk sugar, cornstarch, and egg yolks until pale.
- Slowly pour warm milk into egg mixture while whisking.
- Return to pan and cook over medium heat until thick and creamy.
- Remove from heat, stir in butter and vanilla.
- Pour into cooled crust and chill for 1–2 hours until set.
- Arrange strawberry halves neatly on top of the chilled cream filling.
- Warm jam until liquid, then brush over strawberries for a glossy finish.
- Garnish with mint leaves if desired.
- Chill until ready to slice and serve.
