Description

Flaky puff pastry squares filled with smooth vanilla custard cream, topped with fresh strawberries, raspberries, blueberries, and dusted with powdered sugar for a beautiful and elegant treat.


Ingredients

  • 1 sheet puff pastry (thawed if frozen)
  • 1 egg (beaten, for egg wash)
  • 2 cups whole milk
  • ½ cup granulated sugar
  • 4 large egg yolks
  • 3 tbsp cornstarch
  • 1 tsp vanilla extract (or ½ vanilla bean, scraped)
  • 2 tbsp unsalted butter
  • Fresh strawberries (sliced)
  • Fresh raspberries
  • Fresh blueberries
  • Powdered sugar (for dusting)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Roll out puff pastry slightly and cut into squares. Place on parchment-lined baking sheet.
  3. Lightly score a smaller square inside each pastry (without cutting through) to create a border.
  4. Brush edges with egg wash. Bake for 15–18 minutes, until puffed and golden.
  5. Once baked, press down the inner square gently to make space for filling. Let cool.
  6. Heat milk in a saucepan until steaming (do not boil).
  7. In a bowl, whisk together egg yolks, sugar, and cornstarch until pale and smooth.
  8. Slowly add the hot milk while whisking. Return mixture to saucepan.
  9. Cook over medium heat, whisking constantly until thickened.
  10. Remove from heat, stir in vanilla and butter. Cover with plastic wrap (touching surface) and chill.
  11. Fill each cooled pastry square with custard cream.
  12. Arrange fresh strawberries, raspberries, and blueberries on top.
  13. Dust generously with powdered sugar before serving.
