A refreshing salad combining tuna, cannellini beans, and fresh vegetables.
Ingredients

- 1 can (5 oz) high-quality tuna packed in olive oil
- 1 cup canned cannellini beans, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1/4 small red onion, finely diced
- 1/4 cup fresh parsley, chopped
- 2 tbsp freshly squeezed lemon juice
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Drain the canned tuna and rinse the white beans under cold water.
- Halve the cherry tomatoes and finely dice the red onion.
- In a large bowl, combine tuna, white beans, parsley, tomatoes, and onion. Mix gently.
- Drizzle with olive oil and lemon juice; season with salt and pepper.
- Toss everything together until evenly combined. Serve immediately or chill in the fridge.
Notes
- This salad can be served immediately or makes a great make-ahead dish.
- Adjust the seasoning to taste based on personal preference.
