Description

A refreshing salad combining tuna, cannellini beans, and fresh vegetables.


Ingredients

  • 1 can (5 oz) high-quality tuna packed in olive oil
  • 1 cup canned cannellini beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/4 small red onion, finely diced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Drain the canned tuna and rinse the white beans under cold water.
  2. Halve the cherry tomatoes and finely dice the red onion.
  3. In a large bowl, combine tuna, white beans, parsley, tomatoes, and onion. Mix gently.
  4. Drizzle with olive oil and lemon juice; season with salt and pepper.
  5. Toss everything together until evenly combined. Serve immediately or chill in the fridge.
