Eton Mess Cheesecake Delight is a luscious dessert that combines the classic flavors of Eton Mess with a creamy cheesecake filling, topped with fresh berries and crunchy meringues.

- 300 g digestive biscuits (or graham crackers), crushed
- 120 g unsalted butter, melted
- 500 g cream cheese, softened
- 250 ml double cream (heavy cream), chilled
- 120 g powdered sugar (icing sugar)
- 1 tsp vanilla extract
- Zest of 1 lemon
- 150 g fresh raspberries (plus extra for garnish)
- 150 g fresh strawberries, hulled and chopped
- 2 tbsp caster sugar
- 100 ml double cream, whipped to soft peaks
- 4–5 mini meringue nests, crushed
Instructions
- Prepare the base: Mix crushed biscuits with melted butter. Press firmly into the base of a springform pan. Chill for at least 30 minutes.
- Make the filling: In a bowl, beat cream cheese, icing sugar, vanilla, and lemon zest until smooth. In a separate bowl, whip the double cream until stiff peaks form. Gently fold whipped cream into the cream cheese mixture. Spread filling over the biscuit base and smooth the top. Chill for 4–5 hours or overnight.
- Make the berry compote: In a saucepan, add raspberries, strawberries, and caster sugar. Heat gently until fruit softens and releases juices (about 5 minutes). Remove from heat and let cool completely.
- Assemble the topping: Just before serving, top cheesecake with a swirl of berry compote. Add whipped cream swirls, fresh raspberries, and crushed meringues. Garnish with extra berries for a beautiful finish.

- For a gluten-free version, use gluten-free biscuits.
- Make sure the cream cheese is at room temperature for easier mixing.
- Chilling the cheesecake overnight enhances the flavors.
