  • ½ cup peach schnapps or rum (or peach juice for non-alcoholic)
  • Red and yellow food coloring (liquid or gel)
  • Extra granulated sugar (for rolling)
  • Fresh mint leaves (for garnish, optional)

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, beat softened butter with sugar until creamy and fluffy.
  3. Add eggs one at a time, then mix in vanilla.
  4. In another bowl, whisk together flour, baking powder, and salt.
  5. Gradually add dry ingredients to wet, mixing until a soft dough forms.
  6. Roll dough into small balls (about 1 inch) and place on baking sheet, spacing apart.
  7. Bake for 12–15 minutes, until lightly golden but not browned. Let cool completely.
  8. Once cooled, carefully scoop out a small hollow in the bottom of each cookie using a small knife or spoon.
  9. Pair cookies by size, fill one half with peach jam (or desired filling) and sandwich with the other half.
  10. Mix peach schnapps (or juice) with a few drops of red food coloring in one bowl and yellow in another.
  11. Quickly dip each sandwiched cookie into yellow, then lightly into red for a blushed peach look.
  12. Roll immediately in sugar to coat and garnish with mint leaves for the “peach stem.”
