A delightful recipe for Easy Italian Peach Cookies (Pesche Dolci) that combines soft cookies with a sweet filling, resembling peaches.

- 2 large eggs
- ½ cup (115 g) unsalted butter, softened
- 1 cup (200 g) granulated sugar
- 1 tsp vanilla extract
- 2 tsp baking powder
- 2 ½ cups (320 g) all-purpose flour
- Pinch of salt
- ½ cup peach or apricot jam (for filling)
- Optional: pastry cream, Nutella, or chocolate ganache
- ½ cup peach schnapps or rum (or peach juice for non-alcoholic)
- Red and yellow food coloring (liquid or gel)
- Extra granulated sugar (for rolling)
- Fresh mint leaves (for garnish, optional)
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, beat softened butter with sugar until creamy and fluffy.
- Add eggs one at a time, then mix in vanilla.
- In another bowl, whisk together flour, baking powder, and salt.
- Gradually add dry ingredients to wet, mixing until a soft dough forms.
- Roll dough into small balls (about 1 inch) and place on baking sheet, spacing apart.
- Bake for 12–15 minutes, until lightly golden but not browned. Let cool completely.
- Once cooled, carefully scoop out a small hollow in the bottom of each cookie using a small knife or spoon.
- Pair cookies by size, fill one half with peach jam (or desired filling) and sandwich with the other half.
- Mix peach schnapps (or juice) with a few drops of red food coloring in one bowl and yellow in another.
- Quickly dip each sandwiched cookie into yellow, then lightly into red for a blushed peach look.
- Roll immediately in sugar to coat and garnish with mint leaves for the “peach stem.”
