- 2 pounds boneless, skinless chicken thighs
- 1 cup barbecue sauce
- 1 cup pineapple chunks with juice
- 2 tbsp gluten-free soy sauce
- 1 tbsp brown sugar
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/4 cup sweet onion, diced
Instructions
- Add the chicken to the slow cooker.
- Top with garlic powder and onion powder.
- In a small bowl, mix together the barbecue sauce, pineapple chunks with juice, soy sauce, and brown sugar.
- Pour evenly over the chicken thighs.
- Top the sauce with diced bell peppers and onions.
- Cover and cook on LOW for 8 hours.
- Shred the chicken in the slow cooker and stir it into the sauce to coat.
- Serve with cooked rice or green beans and add the sauce or juice from the slow cooker over the dish.
