Description

A delicious and easy recipe for slow cooker barbecue chicken thighs with pineapple, perfect for a family meal.


Ingredients

  • 2 pounds boneless, skinless chicken thighs
  • 1 cup barbecue sauce
  • 1 cup pineapple chunks with juice
  • 2 tbsp gluten-free soy sauce
  • 1 tbsp brown sugar
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/4 cup sweet onion, diced

Instructions

  1. Add the chicken to the slow cooker.
  2. Top with garlic powder and onion powder.
  3. In a small bowl, mix together the barbecue sauce, pineapple chunks with juice, soy sauce, and brown sugar.
  4. Pour evenly over the chicken thighs.
  5. Top the sauce with diced bell peppers and onions.
  6. Cover and cook on LOW for 8 hours.
  7. Shred the chicken in the slow cooker and stir it into the sauce to coat.
  8. Serve with cooked rice or green beans and add the sauce or juice from the slow cooker over the dish.
