Description

Drunken Monkey Jam is a fun and flavorful twist on traditional jam, made with ripe bananas and a splash of dark rum, perfect for spreading on toast or using in desserts.


Ingredients

  • 6 ripe bananas, mashed
  • ½ cup brown sugar
  • ½ cup granulated sugar
  • ½ cup dark rum
  • 2 tbsp lime juice
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • Pinch of salt

Instructions

  1. Peel and mash bananas with a fork until smooth but slightly chunky.
  2. In a large saucepan over medium heat, combine mashed bananas, both sugars, cinnamon, nutmeg, and salt.
  3. Stir continuously until mixture begins to thicken (about 10 minutes).
  4. Stir in rum, lime juice, and vanilla.
  5. Continue cooking for another 15–20 minutes, stirring often, until jam is glossy and thick enough to coat the back of a spoon.
  6. Place a small spoonful on a chilled plate. If it wrinkles when pushed, it’s ready. If too runny, cook a few minutes longer.
  7. Spoon hot jam into sterilized jars, leaving ½ inch headspace.
  8. Seal with lids and let cool to room temperature.
  9. Refrigerate for up to 1 month, or process in a hot water bath for longer storage.
