Description
Drunken Monkey Jam is a fun and flavorful twist on traditional jam, made with ripe bananas and a splash of dark rum, perfect for spreading on toast or using in desserts.

- 6 ripe bananas, mashed
- ½ cup brown sugar
- ½ cup granulated sugar
- ½ cup dark rum
- 2 tbsp lime juice
- 1 tsp vanilla extract
- 1 tsp cinnamon
- ½ tsp nutmeg
- Pinch of salt
Instructions
- Peel and mash bananas with a fork until smooth but slightly chunky.
- In a large saucepan over medium heat, combine mashed bananas, both sugars, cinnamon, nutmeg, and salt.
- Stir continuously until mixture begins to thicken (about 10 minutes).
- Stir in rum, lime juice, and vanilla.
- Continue cooking for another 15–20 minutes, stirring often, until jam is glossy and thick enough to coat the back of a spoon.
- Place a small spoonful on a chilled plate. If it wrinkles when pushed, it’s ready. If too runny, cook a few minutes longer.
- Spoon hot jam into sterilized jars, leaving ½ inch headspace.
- Seal with lids and let cool to room temperature.
- Refrigerate for up to 1 month, or process in a hot water bath for longer storage.
