Ingredients

  • 1¾ cups (220 g) all-purpose flour
  • ¾ cup (75 g) unsweetened cocoa powder
  • 1½ tsp baking powder
  • 1½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs (room temperature)
  • 1¾ cups (350 g) granulated sugar
  • 1 cup (240 ml) buttermilk
  • ½ cup (120 ml) vegetable oil
  • 2 tsp vanilla extract
  • 1 cup (240 ml) hot coffee or hot water
  • 2 cups (480 ml) whole milk
  • 4 egg yolks
  • ½ cup (100 g) sugar
  • 3 tbsp cornstarch
  • 1 tsp vanilla extract
  • 2 tbsp butter
  • 8 oz (225 g) milk chocolate (or semisweet, chopped)
  • 1½ cups (360 ml) heavy cream
  • 1 tbsp butter
  • Whipped white chocolate ganache or vanilla frosting (for piping)
  • Chocolate curls or sprinkles for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line two 8-inch (20 cm) round pans.
  2. In a bowl, whisk flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, whisk eggs, sugar, buttermilk, oil, and vanilla until smooth.
  4. Add dry ingredients gradually, then stir in hot coffee until the batter is glossy and thin.
  5. Divide between pans and bake for 28–32 minutes, or until a toothpick comes out clean.
  6. Cool completely before slicing into layers.
  7. In a saucepan, heat milk until just steaming.
  8. In a separate bowl, whisk egg yolks, sugar, and cornstarch until pale and smooth.
  9. Slowly pour hot milk into the yolk mixture while whisking constantly.
  10. Return to saucepan and cook over medium heat until thickened (about 5 minutes).
  11. Remove from heat, stir in butter and vanilla, then cover with plastic wrap directly on the surface. Chill until set.
  12. Heat the cream until it begins to simmer.
  13. Pour over chopped chocolate and butter.
  14. Let sit for 1 minute, then stir until silky and smooth.
  15. Chill for 30 minutes, then beat with a hand mixer for a fluffy texture (optional).
  16. Slice both chocolate cakes in half for four layers (optional for extra height).
  17. Place the first layer on a serving plate.
  18. Spread the vanilla cream evenly.
  19. Add the next cake layer and spread the chocolate cream.
  20. Repeat until all layers are stacked.
  21. Frost the top with remaining chocolate cream or ganache.
  22. Pipe white chocolate or vanilla frosting swirls on top.
  23. Add chocolate sprinkles or curls for a finishing touch.
  24. Chill for 1–2 hours before slicing for clean layers.
