Ingredients

  • 3 cups (375g) all-purpose flour
  • ¼ cup (25g) unsweetened cocoa powder
  • ¼ cup (50g) sugar
  • 2 ¼ tsp instant yeast
  • ½ tsp salt
  • ¾ cup (180ml) warm milk (about 40°C)
  • ¼ cup (60g) unsalted butter, softened
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ cup (100g) brown sugar
  • 2 tbsp cocoa powder
  • 1 tbsp ground cinnamon
  • ⅓ cup (75g) unsalted butter, melted
  • ½ cup (90g) finely chopped dark chocolate or mini chocolate chips
  • 1 cup (120g) powdered sugar
  • 2 tbsp unsweetened cocoa powder
  • 3 tbsp milk or cream
  • 1 tbsp melted butter
  • ½ tsp vanilla extract

Instructions

  1. In a large bowl, mix flour, cocoa powder, sugar, yeast, and salt.
  2. Add warm milk, butter, egg, and vanilla extract. Mix until a soft dough forms.
  3. Knead for about 6–8 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover, and let rise in a warm place for 1–1½ hours, or until doubled in size.
  5. In a small bowl, combine brown sugar, cocoa powder, and cinnamon.
  6. Melt butter and set aside for brushing.
  7. Roll out the dough into a rectangle about 12×16 inches (30×40 cm).
  8. Brush with melted butter and sprinkle the sugar-cocoa mixture evenly.
  9. Scatter chopped chocolate or chocolate chips on top.
  10. Roll tightly from the long side and cut into 9–12 rolls.
  11. Arrange in a greased baking dish, cover, and let rise another 30–45 minutes.
  12. Preheat oven to 350°F (175°C).
  13. Bake for 20–25 minutes, until puffed and slightly firm to the touch.
  14. Allow to cool slightly before glazing.
  15. In a bowl, whisk powdered sugar, cocoa powder, milk, melted butter, and vanilla until smooth.
  16. Drizzle generously over warm rolls.
  17. Let the glaze set slightly before serving (if you can wait that long 😋).
