- ¼ cup (25g) unsweetened cocoa powder

- 2 ¼ tsp instant yeast

- ¾ cup (180ml) warm milk (about 40°C)
- ¼ cup (60g) unsalted butter, softened
- 1 large egg
- 1 tsp vanilla extract
- ½ cup (100g) brown sugar
- 2 tbsp cocoa powder
- 1 tbsp ground cinnamon
- ⅓ cup (75g) unsalted butter, melted
- ½ cup (90g) finely chopped dark chocolate or mini chocolate chips
- 1 cup (120g) powdered sugar
- 2 tbsp unsweetened cocoa powder
- 3 tbsp milk or cream
- 1 tbsp melted butter
- ½ tsp vanilla extract
Instructions
- In a large bowl, mix flour, cocoa powder, sugar, yeast, and salt.
- Add warm milk, butter, egg, and vanilla extract. Mix until a soft dough forms.
- Knead for about 6–8 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover, and let rise in a warm place for 1–1½ hours, or until doubled in size.
- In a small bowl, combine brown sugar, cocoa powder, and cinnamon.
- Melt butter and set aside for brushing.
- Roll out the dough into a rectangle about 12×16 inches (30×40 cm).
- Brush with melted butter and sprinkle the sugar-cocoa mixture evenly.
- Scatter chopped chocolate or chocolate chips on top.
- Roll tightly from the long side and cut into 9–12 rolls.
- Arrange in a greased baking dish, cover, and let rise another 30–45 minutes.
- Preheat oven to 350°F (175°C).
- Bake for 20–25 minutes, until puffed and slightly firm to the touch.
- Allow to cool slightly before glazing.
- In a bowl, whisk powdered sugar, cocoa powder, milk, melted butter, and vanilla until smooth.
- Drizzle generously over warm rolls.
- Let the glaze set slightly before serving (if you can wait that long 😋).

- For best results, ensure the milk is warm but not hot to avoid killing the yeast.
