- 1 lb ground beef (or ground turkey)
- 1 packet taco seasoning (or homemade: chili powder, paprika, cumin, garlic powder, onion powder, oregano, salt & pepper)
- 1/4 cup water
- 1 cup shredded lettuce
- 1 cup diced tomatoes (optional)
- 1/2 cup shredded cheddar cheese (optional inside tacos)
- 1 tbsp butter
- 1 tbsp all-purpose flour
- 1 cup whole milk
- 1 1/2 cups shredded cheddar cheese (or Mexican blend)
- 1/4 tsp chili powder
- 1/4 tsp cumin
- Salt & pepper, to taste
- 1 can Rotel (diced tomatoes with green chilies), drained (optional for extra flavor)
- Nacho Cheese Doritos taco shells (store-bought, or DIY by gently baking tortillas with crushed Doritos coating)
Instructions
- In a skillet over medium heat, brown the ground beef until cooked through. Drain excess fat. Add taco seasoning and water, stir, and simmer until thickened.
- In a saucepan, melt butter and whisk in flour. Cook 1 minute. Slowly whisk in milk until smooth and slightly thickened. Stir in shredded cheese, chili powder, cumin, and Rotel if using. Keep warm over low heat.
- Fill Doritos shells with shredded lettuce. Add seasoned beef and optional shredded cheese. Drizzle warm queso sauce generously over the top.
- Garnish with diced tomatoes, jalapeños, or sour cream if desired. Serve immediately while hot and crispy.
Notes
- For a spicier kick, add more chili powder or jalapeños.
