Crispy nacho cheese Doritos shells stuffed with seasoned beef, shredded lettuce, and topped with creamy homemade queso sauce — the ultimate Tex-Mex comfort food.


Ingredients

  • 1 lb ground beef (or ground turkey)
  • 1 packet taco seasoning (or homemade: chili powder, paprika, cumin, garlic powder, onion powder, oregano, salt & pepper)
  • 1/4 cup water
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes (optional)
  • 1/2 cup shredded cheddar cheese (optional inside tacos)
  • 1 tbsp butter
  • 1 tbsp all-purpose flour
  • 1 cup whole milk
  • 1 1/2 cups shredded cheddar cheese (or Mexican blend)
  • 1/4 tsp chili powder
  • 1/4 tsp cumin
  • Salt & pepper, to taste
  • 1 can Rotel (diced tomatoes with green chilies), drained (optional for extra flavor)
  • Nacho Cheese Doritos taco shells (store-bought, or DIY by gently baking tortillas with crushed Doritos coating)

Instructions

  1. In a skillet over medium heat, brown the ground beef until cooked through. Drain excess fat. Add taco seasoning and water, stir, and simmer until thickened.
  2. In a saucepan, melt butter and whisk in flour. Cook 1 minute. Slowly whisk in milk until smooth and slightly thickened. Stir in shredded cheese, chili powder, cumin, and Rotel if using. Keep warm over low heat.
  3. Fill Doritos shells with shredded lettuce. Add seasoned beef and optional shredded cheese. Drizzle warm queso sauce generously over the top.
  4. Garnish with diced tomatoes, jalapeños, or sour cream if desired. Serve immediately while hot and crispy.

Notes

  • For a spicier kick, add more chili powder or jalapeños.
