Doritos-Crusted Cheesecake Bites are a unique and delicious treat that combines the creamy richness of cheesecake with the savory crunch of Doritos.

- 1 ½ cups crushed graham crackers
- ¼ cup finely crushed Doritos (Nacho Cheese flavor works best)
- ½ cup unsalted butter, melted
- 2 tbsp sugar
- 16 oz (450 g) cream cheese, softened
- ¾ cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- ½ cup sour cream
- 1 cup crushed Doritos
- 2 tbsp brown sugar
- 2 tbsp melted butter
- Caramel sauce drizzle (optional)
- White chocolate drizzle or icing (optional)
- Extra Doritos crumbs for sprinkling (optional)
Instructions
- Preheat oven to 325°F (163°C).
- Mix graham cracker crumbs, finely crushed Doritos, melted butter, and sugar.
- Press into the bottom of a greased 8×8-inch pan. Bake for 8–10 minutes, then cool.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing until just combined.
- Stir in vanilla and sour cream.
- Pour over the cooled crust.
- In a small bowl, combine crushed Doritos, brown sugar, and melted butter.
- Sprinkle evenly over the cheesecake batter.
- Bake for 35–40 minutes, until edges are set but center is slightly jiggly.
- Cool completely, then refrigerate for at least 3 hours (or overnight).
- Slice into squares or bars.
- Drizzle with caramel sauce or white chocolate.
- Sprinkle with extra Doritos crumbs if desired.
Notes
- For a sweeter topping, increase the amount of brown sugar in the Doritos crumble.
- These bites can be made a day in advance for better flavor.
- Experiment with different flavors of Doritos for a unique twist.
