Delicious puff pastry rolls filled with creamy mashed potatoes, sharp cheddar, and crunchy pickled walnuts.

- 300 g Mashed potato
- 150 g Grated mature cheddar
- 3 Pickled walnuts
- 1/2 Banana shallot
- 320 g Puff pastry sheet
- 1 medium Free-range egg
- 1 tsp Nigella seeds
Instructions
- Preheat the oven to 200°C fan/gas 7.
- Combine the mashed potato, grated cheddar, roughly chopped pickled walnuts, and finely chopped banana shallot in a bowl. Add a pinch of salt and pepper, mixing until everything is evenly blended.
- Cut the puff pastry sheet in half lengthways to create two long strips.
- Shape half of the filling mixture into a sausage, about 2 thick and matching the length of the pastry. Repeat for the remaining filling.
- Place each sausage in the center of the pastry strips, leaving space at the edges to create a seal.
- Brush the beaten egg along one edge of the pastry.
- Roll the pastry around the filling, pressing the edges firmly together to seal.
- Crimp the edges with a fork and give your rolls an egg wash and sprinkle with nigella seeds.
- Slice each log into 9-10 pieces and arrange on a baking tray lined with baking paper.
- Bake for 12 minutes until golden and crisp. Allow to cool to room temperature before serving.
