Description

Delicious puff pastry rolls filled with creamy mashed potatoes, sharp cheddar, and crunchy pickled walnuts.


Ingredients

Scale
  • 300 g Mashed potato
  • 150 g Grated mature cheddar
  • 3 Pickled walnuts
  • 1/2 Banana shallot
  • 320 g Puff pastry sheet
  • 1 medium Free-range egg
  • 1 tsp Nigella seeds

Instructions

  1. Preheat the oven to 200°C fan/gas 7.
  2. Combine the mashed potato, grated cheddar, roughly chopped pickled walnuts, and finely chopped banana shallot in a bowl. Add a pinch of salt and pepper, mixing until everything is evenly blended.
  3. Cut the puff pastry sheet in half lengthways to create two long strips.
  4. Shape half of the filling mixture into a sausage, about 2 thick and matching the length of the pastry. Repeat for the remaining filling.
  5. Place each sausage in the center of the pastry strips, leaving space at the edges to create a seal.
  6. Brush the beaten egg along one edge of the pastry.
  7. Roll the pastry around the filling, pressing the edges firmly together to seal.
  8. Crimp the edges with a fork and give your rolls an egg wash and sprinkle with nigella seeds.
  9. Slice each log into 9-10 pieces and arrange on a baking tray lined with baking paper.
  10. Bake for 12 minutes until golden and crisp. Allow to cool to room temperature before serving.
