Description

This creamy chicken spinach bake is a delicious blend of shredded chicken, cream cheese, and fresh spinach, topped with melty mozzarella.


Ingredients

  • 1 ½ cups cooked and shredded chicken
  • 8 oz cream cheese (softened)
  • 1 cup sour cream
  • 1 ½ cups shredded mozzarella
  • 1 cup shredded parmesan
  • 1 ½ tsp minced garlic
  • 1 tsp Italian seasoning
  • 1 tsp onion powder
  • ¼ tsp salt
  • ½ cup sun-dried tomatoes in oil (chopped)
  • 1 cup fresh spinach (roughly chopped)
  • Optional: fresh basil (for garnish)

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, mix together the softened cream cheese and sour cream until smooth using a hand mixer or stand mixer.
  3. Add in 1 cup mozzarella, parmesan, garlic, Italian seasoning, onion powder, and salt. Mix again until combined.
  4. Fold in the sun-dried tomatoes in oil, spinach, and shredded chicken until evenly combined.
  5. Spread mixture into a medium baking dish or large cast iron skillet and smooth into an even layer.
  6. Top with the remaining ½ cup mozzarella.
  7. Bake for 25 minutes, or until hot and bubbly.
  8. Broil for 1 minute, or until the cheese on top is golden brown.
  9. Garnish with extra sun-dried tomatoes and fresh basil before serving.

Notes

  • For a spicier version, consider adding crushed red pepper flakes to the mixture.
  • This dish can be made ahead of time and stored in the refrigerator before baking.
