Ingredients

  • 4 cups all-purpose flour
  • 1 tbsp sugar
  • 2 ¼ tsp (1 packet) instant yeast
  • 1 ½ tsp salt
  • 1 ½ cups warm water (110°F / 45°C)
  • 2 tbsp olive oil
  • 2 cups pizza sauce (store-bought or homemade)
  • 1 tsp Italian seasoning
  • ½ tsp garlic powder
  • 4 cups shredded mozzarella cheese
  • 2 cups pepperoni slices
  • ½ cup grated Parmesan cheese
  • Extra mozzarella for topping
  • Extra pepperoni slices for topping

Instructions

  1. In a large bowl, mix flour, sugar, yeast, and salt.
  2. Add warm water and olive oil. Stir until dough forms.
  3. Knead for 8–10 minutes until smooth and elastic.
  4. Place in a greased bowl, cover, and let rise 1 hour, until doubled.
  5. Preheat oven to 375°F (190°C).
  6. Grease and line a tall springform pan (or deep cake pan).
  7. Roll out dough into a large circle, big enough to cover the bottom and sides of the pan.
  8. Press dough into the pan, letting excess hang over the edges.
  9. Spread a thin layer of sauce on the bottom.
  10. Add a layer of mozzarella, pepperoni, and Parmesan.
  11. Repeat layers (sauce → cheese → pepperoni) until nearly to the top, about 4–5 layers.
  12. Fold excess dough over the top edges to seal.
  13. Finish with sauce, mozzarella, and a final layer of pepperoni on top.
  14. Bake uncovered for 40–50 minutes, until crust is golden and cheese is bubbly.
  15. If top browns too quickly, cover loosely with foil.
  16. Let rest 10 minutes before slicing into tall, cheesy wedges.
