Ingredients

  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup hot coffee (or hot water)
  • 1 cup unsalted butter (softened)
  • 1 cup creamy peanut butter
  • 3 cups powdered sugar
  • ¼ cup heavy cream (more if needed)
  • 1 tsp vanilla extract
  • 1 cup granulated sugar
  • 6 tbsp unsalted butter (cubed)
  • ½ cup heavy cream (room temp)
  • Pinch of salt
  • 1 cup salted peanuts, chopped
  • 1 cup chocolate ganache (optional, for topping)
  • Extra caramel drizzle

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 9-inch round cake pans.
  2. In a large bowl, whisk flour, sugar, cocoa, baking soda, baking powder, and salt.
  3. Add buttermilk, oil, eggs, and vanilla. Mix until combined.
  4. Stir in hot coffee until batter is smooth (will be thin).
  5. Divide into pans and bake 30–35 minutes, until toothpick comes out clean. Cool completely.
  6. Heat sugar in a saucepan over medium, stirring until melted and amber-colored.
  7. Add butter, whisk until melted. Slowly stir in cream (it will bubble).
  8. Simmer 1–2 minutes, then remove from heat. Stir in salt. Cool slightly.
  9. Beat butter and peanut butter until smooth.
  10. Gradually add powdered sugar, vanilla, and cream until fluffy.
  11. Place one cake layer on a plate. Spread frosting, drizzle with caramel, and sprinkle peanuts.
  12. Add second cake layer. Frost top and sides with peanut butter frosting.
  13. Top with ganache, more caramel drizzle, and chopped peanuts.
