Ingredients

  • 4 oz dark chocolate, chopped
  • ½ cup unsalted butter, plus extra for greasing
  • ½ cup granulated sugar
  • 2 large eggs
  • 2 egg yolks
  • ¼ cup all-purpose flour
  • ¼ cup creamy peanut butter
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 425°F (220°C) and grease four ramekins with butter.
  2. Melt the dark chocolate and butter together in a microwave-safe bowl in 30-second intervals, stirring until smooth.
  3. In another bowl, whisk together granulated sugar, whole eggs, and egg yolks until light and frothy.
  4. Sift in the flour and fold gently into the egg mixture until just combined.
  5. Stir in the melted chocolate mixture until fully blended.
  6. Spoon half of the batter into each ramekin, add a dollop of peanut butter in the center, then top with remaining batter until three-quarters full.
  7. Bake for 12-14 minutes until set around the edges but soft in the middle.
  8. Let cool for a minute before inverting onto plates and dusting with powdered sugar.

Notes

  • Be careful not to overbake, as you want the centers to remain molten.
  • Serving immediately after baking gives the best texture.
