Taco Cornbread Casserole

Description

A delicious and hearty Taco Cornbread Casserole that combines seasoned ground beef with a cheesy cornbread topping. Perfect for a family meal!


Ingredients

  • 2 tablespoons Canola oil
  • 1 cup Yellow onion, diced
  • 1 pound Lean ground beef
  • 2 cloves Garlic, finely chopped
  • 1 packet Taco seasoning
  • 2 tablespoons Tomato paste
  • 1 cup Tomato sauce
  • 1 can Black beans
  • 1 teaspoon Kosher salt
  • 2 cups Pre-shredded Mexican 4-cheese blend
  • 1 cup Cornmeal
  • 1 tablespoon Granulated sugar
  • 1 tablespoon Baking powder
  • 1 large Egg
  • 1 cup Whole buttermilk
  • 1/2 cup Unsalted butter, melted
  • 1 cup Cream-style corn
  • 1/2 cup Chopped green chiles
  • 1/4 cup Fresh cilantro, chopped
  • 1 cup Sour cream
  • 1 medium Avocado, sliced

Instructions

  1. Preheat oven to 350°F.
  2. Cook onions in canola oil until translucent, about 5 minutes.
  3. Add ground beef and garlic; cook until browned, about 5-7 minutes.
  4. Stir in taco seasoning, tomato paste, tomato sauce, black beans, and kosher salt; simmer for 5 minutes.
  5. In a bowl, mix cornmeal, sugar, baking powder, and kosher salt.
  6. In another bowl, whisk together egg, buttermilk, and melted butter.
  7. Combine wet and dry ingredients; fold in cream-style corn, green chiles, and cilantro.
  8. Grease baking dish, layer beef mixture, then spread cornbread mixture on top.
  9. Bake for 30-35 minutes until golden brown.
  10. Let cool for 5 minutes, top with sour cream and avocado before serving.

Notes

  • Make sure the ground beef is cooked thoroughly.
  • Feel free to adjust the spice level by using mild or spicy taco seasoning.
