A delicious and hearty Taco Cornbread Casserole that combines seasoned ground beef with a cheesy cornbread topping. Perfect for a family meal!

- 2 tablespoons Canola oil
- 1 cup Yellow onion, diced
- 1 pound Lean ground beef
- 2 cloves Garlic, finely chopped
- 1 packet Taco seasoning
- 2 tablespoons Tomato paste
- 1 cup Tomato sauce
- 1 can Black beans
- 1 teaspoon Kosher salt
- 2 cups Pre-shredded Mexican 4-cheese blend
- 1 cup Cornmeal
- 1 tablespoon Granulated sugar
- 1 tablespoon Baking powder
- 1 large Egg
- 1 cup Whole buttermilk
- 1/2 cup Unsalted butter, melted
- 1 cup Cream-style corn
- 1/2 cup Chopped green chiles
- 1/4 cup Fresh cilantro, chopped
- 1 cup Sour cream
- 1 medium Avocado, sliced
Instructions
- Preheat oven to 350°F.
- Cook onions in canola oil until translucent, about 5 minutes.
- Add ground beef and garlic; cook until browned, about 5-7 minutes.
- Stir in taco seasoning, tomato paste, tomato sauce, black beans, and kosher salt; simmer for 5 minutes.
- In a bowl, mix cornmeal, sugar, baking powder, and kosher salt.
- In another bowl, whisk together egg, buttermilk, and melted butter.
- Combine wet and dry ingredients; fold in cream-style corn, green chiles, and cilantro.
- Grease baking dish, layer beef mixture, then spread cornbread mixture on top.
- Bake for 30-35 minutes until golden brown.
- Let cool for 5 minutes, top with sour cream and avocado before serving.
Notes
- Make sure the ground beef is cooked thoroughly.
- Feel free to adjust the spice level by using mild or spicy taco seasoning.
