Ingredients

  • 2 tbsp butter
  • 1/4 cup heavy cream (or milk)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or Gruyère)
  • Salt & black pepper to taste
  • 2 tbsp fresh chives, finely chopped
  • 1 sheet puff pastry (store-bought or homemade), thawed
  • 1 egg (for egg wash)
  • 1 tbsp grated Parmesan (optional, for extra crispiness)

Instructions

  1. Boil potatoes in salted water until fork tender (about 15 minutes). Drain, then mash with butter and cream until smooth. Stir in shredded cheese, salt, pepper, and chives. Let cool to room temperature.
  2. Roll out puff pastry into a rectangle on a lightly floured surface. Spread the cooled mashed potato mixture evenly over the pastry. Roll up tightly into a log. Slice into 1-inch thick rounds and place on a parchment-lined baking sheet.
  3. Brush tops with egg wash. Sprinkle with Parmesan if desired. Bake at 400°F (200°C) for 18–22 minutes, until puffed and golden brown.
  4. Sprinkle with extra chopped chives. Serve warm as an appetizer, side dish, or party snack.
